The books say the reason there are not very many humans is because they were too weak to be part of the gods' new world. That is why humans are mostly gone, and that is why the humans who are still alive are mostly slaves.
Being weak makes them stupid? This is conflating two very different things. Weakness is one thing, and can't necessarily be helped. Stupidity is a completely different kettle of fish. I guess it depends on how they died, and what did your God do.

They were not all Vin's creatures, and Vin is not benevolent. Vin makes chaos and madness and we serve him because he is smart and that makes us strong.

Yes, blindness is a metaphor. I just mean that some people follow the rules of their God without thinking about them, or what they mean, to them and others. It's dangerous.
